Just a quick post about my favorite guacamole.
1 Hass avocado, scooped from peeling, pit discarded
1 small lime, juiced
1 medium tomato, chopped
1/4 - 1/2 tsp ground chipotle powder
1 Tbsp cilantro, minced
1) In a small bowl, mash the avocado with the lime juice.
2) Stir in the tomato, cilantro, and chipotle powder.
3) Season to taste with kosher salt, pepper, and Tabasco green.
For a nice change, stir in a tablespoon or two of plain, 2% Greek yogurt or light sour cream.
Serve with tortilla chips, veggies, or a spoon.
