Yakitori-style Grilled Tuna Skewers

Yesterday was a day of experimental cooking. I found some nice albacore tuna steaks at the market and started dreaming of marinating them in Yakitori style. In general, Yakitori is grilled chicken and veggies in a sweet or salty soy sauce. (Okay, I'm no Yaki expert, so I'd suggest learning more about it here.)

No measurements here, as I just whipped up the marinade according to my taste buds.
Yakitori-style Grilled Tuna Skewers
unfiltered sake
chili sauce
soy sauce
rice wine vinegar
pinch of sugar and salt (to taste; you may not need it if you've used seasoned rice wine vinegar)
juice of one orange
freshly ground cracked pepper
2 - 3 cloves garlic, minced
cayenne pepper
2 large tuna steaks, cut into 1/2 " thick strips

Mix all ingredients except tuna, sugar, and salt in a bowl, tasting along the way. Adjust ingredients to your taste, add sugar and/or salt if needed. Place tuna strips in a plastic, zippered bag and pour in marinade. Marinate about 15 - 20 minutes, while heating grill to medium.
Drain and discard marinade from tuna. Thread tuna lengthwise onto skewers and grill to desired level of doneness. Turning once or twice during cooking.

Enjoy with soba noodles and cold beer or sake!
